Rum has strong roots in Australian culture, it’s been the go-to spirit at gatherings for many generations β€” but there’s a surprising lack of variety. Rum is actually legislated quite differently in Australia compared to the rest of the world, for example some of our β€œaged cane spirits” would be considered rum in other countries.

Some of the nicest rums in the world aren’t even available here and we got sick of paying through the nose for postage and import taxes. As self-appointed rum afficionados, we also started to wonder what a Melbourne made rum might taste like - so we got to work.

Our rum β€˜aged cane spirits’ are lighter on the palate, with a little hint of vanilla and berries.

  • We don’t climate control our barrels, which means the weather and environment around our distillery determines how long we age them. If you’ve spent any time in Melbourne, you’ll know our weather is a little all over the place, which causes our barrels to contract, swell up, heat up, and cool down at random and crazy intervals - so our β€˜aged cane sprits’ are truly imbued with a Melbourne taste.

  • In Australia, liquor needs to be aged in barrels for 2 years before it can legally be called rum.

    When we tasted one of our barrels at the 18 month mark, we decided it was way too tasty and wanted to bring it to you immediately - which is why we’re calling it an β€œaged cane spirit”.

    The next time we bottle a barrel, we’ll be able to officially call it a Melbourne rum.

FUN FACT

The first cocktail was made with rum, in 1586. Sir Francis Drake wanted his men to stop getting sick, so he mixed a drink with mint to calm the stomach, lime to treat scurvy, sugar to make it taste good, and rum to make the men drink it β€” sounds like a mojito to us!
