Three friends and a small copper still called β€˜Hannelore’, in a little shed in the backstreets of Kensington, are at the heart of Nubilum.

Nubilum Distilling was born during the global lockdown in 2020, clichΓ© - we know.

The isolation meant that our local community quickly became our new friends and family, and we were soon (unofficially) adopted by our new babushka (Ukrainian), hermano (Colombian), barΓ’dar (Persian) and madre (Italian).

They kept us fed and watered, and shared their stories and traditional drinks with us over backyard fences and kitchen tables. We learned the methods of making many of these traditional drinks were starting to fade from our community, and an idea started fermenting in our minds.

Whilst the road ahead wasn’t clear, we knew we wanted to find a way to share these stories and traditions hidden within west Melbourne’s incredible history - and Nubilum was born.

We use locally sourced ingredients and a blend of traditional and modern distilling methods, and we’re proud to call our spirits β€œMelbourne Made”.
