The Flemingals are in the house

We had an awesome day with Sue and her gals (aka “The Flemingals”) as we made a custom batch of our Lemon Spirit.

The Flemingals handpicked a total of 42kg (yes - FORTY-TWO KILOS) of lemons from their backyards, family farms and orchards, and we can’t forget about the one lemon from Sue’s balcony 😁

We spent a fun few hours peeling and juicing the lemons together; we loved hearing the distillery full of their happy chatter and laughter as they worked. It took them about two hours to work through their buckets of lemons - something that would have taken us at least 6 hours to do on our own!

 
 

The lemon peels will macerate in some distilled lemon spirit from our previous batch, for about 10-14 days, then we’ll strain the spirit, blend it down to drinkable levels of alcohol, and bottle it.

The lemon juice from this batch of lemons will ferment for a few months, until it's ready to be distilled into the next batch of lemon spirit.

The Flemingals came back a few weeks later for Stage 2 of the process, where learnt how to blend the spirit and participated in some taste testing as we worked towards the final blend recipe for this batch.

FUN FACT: Each batch needs its own blending recipe because every batch of lemons taste different.

UPDATE: The final Lemon Spirit product was actually submitted to the 2024 Australian Distilled Spirits Awards and won a BRONZE medal!
